Where do I configure which reports are in the quick launch? If you click on the blue/white hamburger menu and have the recent reports, "Overview - Sales", "Search - Orders", and "System Dashboard". Where do I add and remove entries?

Yes, you can define that in the report itself:
open the report,
select a root view,
then use the properties 'Show in the Web menu' and 'Menu name'
This allows to publish the report you wan, with the path you want.

How do you un-publish it if you've already removed that report?

if an un-publish report still appear, you have to logout/login, at last restart the Web Server (it is an issue that will be fixed in the next release)
